2nd Yummy Giveaway!!!

I have a Yummy book that I am giving away for my 2nd giveaway!! It is Rachel Ray's Yum-O! The Family Cook Book.
Here is what they have to say about Rachel's Yum-O! Cookbook:

No one has helped more families find time to fit home-cooked meals into their daily routines than Rachael Ray. Now with the help of Yum-o!, the organization she founded to help kids and adults develop a healthier relationship to food and cooking, she has put together the ultimate family cookbook, which includes recipes that both kids and their parents will love cooking–and eating–together!

Rachael knows that every family wants to make the best possible food choices–and get the very most out of their food-budget dollars. The recipes here feature more whole grains, use less fat, and make the most of fresh fruits and vegetables so they are as good for you as they are delish, and they’re all quintessential Rachael–fun and creative.

You’ll also find notes on how to get even very young kids involved in the cooking process; great ideas for everything from breakfast to the lunchbox to dinner; wholesome snacks; and loads of new double-duty dinners that let you cook once, then eat twice or more.

With lots of full-color photos and tons of helpful tips for making mealtime the very best part of the day, Yum-o! is a must-have for every busy family.

It retails for $22.50, but you can win it if you do at least the first 1 of these 3 things, and you will get additional entries for 2 and 3.

1. Post a comment on my blog about what your favorite dish to cook. (you can get another entry if you give me the recipe or the link to the recipe!)

Hey! Thanks for stopping by my blog and entering the giveaway. :) I LOVE the blog about your boys...so precious!

Okay...one of my favorite dishes to make this time of year is chili. I always have made it one way, however, I had it last year at a friend's house and have been copying her recipe ever since...it's soooo delicious! Here's the link to the recipe:

It's especially yummy served in a bread bowl!

I'm going to say my favorite dish to cook is meatloaf. That's about the only one i can thing of right now that i know how to cook! mac 'n' cheese, and other ready-made/box meals excluded. ^__^ I'm a newlywed just getting started on cooking real meals. My ramen days are ending...

Well, I guess technically this is not a dish, but I do love it. It is called Apple Cake and it is my favorite dessert in the whole world (that is not an exageration).

I love Rachel Ray, I watch her talk show and her cooking show!

My favorite thing to cook is Veggie Enchiladas.

The recipe for my veggie enchiladas has actually been passed down from my elders.

You'll need tortillas, onions, vinegar, oregano, cooking oil, enchilada sauce, sour cream, cheese (any cheese will do) and cabbage.

*Heat up the enchilada sauce in a small sauce pan.
*Heat up the oil in a large non-stick pan (you'll need to fry the tortillas)
*Cut up your veggies!
*Put the cut up onion into a bowl and add the vinegar and oregano. Mix ingredients together!
*Dip tortillas into the sauce then toss them into the frying pan. Only fry the tortillas until the edges are a little crispy.

After the tortilla has fried for a while, spread it flat on a plate. After you've fried about 4-5 all you have to do is spoon the mixture of vinegar, oregano and onion over the tortillas. I then stuff the tortillas with the cabbage(fold tortillas in halves) top it off with a dab of sour cream and a sprinkle of cheese.

Yuuummm!! :)

Adding boiled shredded chicken breast for "chicken enchiladas" is also yummy!

I think I really need a few cook books because I get all my recipes from websites like allrecipes.com! My favorite is Whit's Chicken Enchiladas (http://allrecipes.com/Recipe/Whits-Chicken-Enchiladas/Detail.aspx). My husband and father in law go nuts for this dish, but it is SO fattening! :P

I LOVE Rachael Ray!! Let's see, one of my favorite things to cook would probably have to be my go-to meal of crescent chicken. It's way easy to make, and for a while it was our Monday night dinner!

Here's the recipe:
*one roll of crescent rolls, divided into rectangles (4 total)
*can of chicken, drained
*splash of milk
* 4 oz of cream cheese, softened
*whatever spices you might like (we've done paprika, lemon pepper, garlic, etc)

Preheat oven to 375. Mix chicken, milk, cream cheese, and spices in a bowl. Press crescent rolls out into rectangle shapes on baking pan. Put equal amounts of mixture ontop of each rectangle. Close them up by pinches the corners all together. Bake for 15-20 minutes, or until golden brown. Yummy served with macaroni and cheese and green beans!
